Empowered Cookie… Need I Say More?

Soft, chewy, sweet… These are just a few words that describe how I expect a cookie to be! As I sit here eating my Double Chocolate Chunk vegan cookie, post-workout, I figured I had to come on and tell you about this tasty, yet blood sugar-friendly treat that fits the bill for anyone looking to manage their blood sugars! Empowered Cookie is a nutrient-dense, but actually delicious, vegan cookie brand that offers a selection of delectable flavors, from Ginger Molasses (soft and spicy!) to Chocolate Cherry (perfect for a post-dinner treat). Whether you’re on the blood sugar journey or not, this might just be your new go-to snack – and one you can feel satisfied with after eating.

When it comes to eating carbs while on the blood sugar journey, limit “lonely carbs.” In order to have an optimal, within range blood glucose response after eating, you want to pair carbs with a source of protein, fat, and fiber. Whether or not you have prediabetes or type 2 diabetes, this tip comes in handy, because it also keeps you full for longer! When you eat a regular cookie for a snack, there’s limited (if any) protein and fiber. However, when you have an Empowered Cookie, there’s already 7 grams of protein and 5 grams of fiber in the cookie – leading to a better blood sugar response!

Empowered Cookie uses a short list of nutritious ingredients that are easily identifiable. Their vegan cookies are made with almond meal, instead of flour, which decreases the total carbohydrates in their cookies. Additionally, it makes their vegan cookies a healthy source of fat. Coconut nectar is used in lieu of sugar, which is digested and absorbed in less time than regular table sugar. As a result, it is less likely to see an out-of-range blood sugar reading after eating it. They also use golden flaxseed meal, instead of eggs, which gives their vegan cookies a nutty flavor that adds healthy fats and fiber – 2 blood-sugar stabilizing nutrients. Flaxseed is also an excellent source of omega-3 fatty acids, which promote heart and brain health, and can even lower triglycerides. Using no animal products makes it a great option for those on vegan diets, as well. Empowered Cookie is a great vegan cookie for those looking to lower their blood sugars, or those aiming to stay full for longer. Check out their list of wholesome ingredients here.

It’s clear that Empowered Cookie cares about ingredients, taste, and macronutrient composition of their cookies. One vegan cookie comes in at only about 16 grams of carbohydrates, 7 grams of protein, and 5 grams of fiber. The quantity of carbohydrates, along with a good source of protein and fiber, make it a well-balanced, type 2 diabetes-friendly snack. Protein and fiber slow digestion and absorption of glucose, leading to more within range blood sugar readings. Additionally, protein and fiber provide satiety, so you aren’t full soon after having your cookie. Whether you’re vegan or not, you can feel good about having this vegan cookie for so many reasons!

As a dietitian, when I look for snack options for my clients, I am always keeping my eyes peeled for qualities and certifications that can suit a wide variety of diets. Empowered Cookies are made with organic ingredients, and are Certified Gluten Free, Paleo-Friendly, Vegan, and Non-GMO. They also hold certifications for 1% For the Planet, Women-Owned, and No Palm Oil. It means a lot to me when I find brands that not only care about the earth, but also the people that live on it. I personally feel good about eating these cookies, as well as recommending them to my clients.

Chocolate Chip Walnut is my favorite flavor, but Empowered Cookie has other flavors like Double Chocolate Chunk or Chocolate Chip Cherry, which are great for an after-dinner treat, or if you’re an all day chocolate lover, like me. Lemon Lavender, Raisin Walnut, and Ginger Molasses are great to grab for a morning snack, or afternoon tea or coffee. They’re just the right amount of sweet that makes them a great “all day” vegan cookie.
